It can be confusing to know where to position your oven rack when cooking or baking, especially if the recipe does not mention or suggest it. Here are some guidelines that might help.
Top Oven Rack
Use this rack placement when broiling or anything you want to brown on top, like casseroles or fruit crisps.
Middle Oven Rack
Ideal for most types of foods, this position allows for proper air circulation and even cooking due to consistent heat. This is also the best position for baking cookies. If you need to cook two sheets of cookies at once, use the top and middle racks and swap the sheet positions midway through baking. Add an additional two minutes to the cooking time.
Lower Oven Rack
Use this position for roasted vegetables, pizzas and breads that need a crisp bottom from intense heat.
You can also move items to different racks during the cooking or baking process. You can choose the middle rack for even and consistent cooking and move it to the top rack for only broiling or browning.
